Tasting Notes
Dark ruby color with purplish hue. Elegant aromas of black fruit, pepper, and vanilla. Projecting a silky, sexy, texture with notes of chocolate, dried cherries, and light oak. The wine finishes with a long and dry finish.
FOOD PAIRING:
Perfect to pair with spaghetti bolognese, roast lamb with rosemary and garlic, and Pecorino cheese. For best results, open the wine 30 minutes before drinking,
serving at 68 °F (22 °C).
Wine facts :
Ripasso, sometimes called as “baby Amarone,” shares the same varietal as the well-adored wine. Both made with Corvina, Rondinela, and Molinara- these noble grapes make Verona’s most important and oldest red wine that date back to the Romans.
Valpolicella Ripasso Superiore was made by re-passing (Ripasso) Valpolicella wine with the leftover grape skins and seeds from fermented Amarone with extended maceration.
